    Hi Corynn. No, don’t put them in the fridge, just leave them on the table and they’ll go hard in a day or so. Putting them in the fridge can cause condensation which makes them go soft. The recipe I use for royal icing is 500grams of icing sugar and 3 tablespoons of actiwhite (dried egg whites). I mix that together then add water until I get the consistency I want – it’s usually around 1/2 cup water, but I add it slowly and let it mix for a while before adding more.
